The attached four reports here - in Acrobat pdf format - give details of research commissioned by the HIE network on the subject of the provision of abattoir and meat processing facilities.

The target areas for such an initiative, which could be one or more fixed plants or indeed mobile plant, are in Skye and Wester Ross; Lochaber and Argyll and the Islands - where current provision is non-existent.

The reports build on the market opportunities that exist in terms of making local food more accessible to all but highlight the fact that slaughtering and processing facilities will require significant commitment from producers, particularly in guaranteeing throughput, in order to achieve commercial viability.
